Ground Beef, Butternut Squash and Greens Recipe

Life is so full these days - I’m squeezing my work-week into 4 days, building my own business, caring for my household, building relationships and making time for enjoyable activities and lots of rest. It is especially important (and challenging) to attend to your nutrition when you are juggling so many things, but cooking has to be simple or it just won’t happen.

Today was grocery day, and my habit is to take stock of what I have on hand before grocery shopping and try to use that up first. Today’s refrigerator and pantry finds included a butternut squash, half an onion, a pound of organic grass-fed ground beef and a bag of organic mixed greens. These ingredients fit wonderfully into my “easy, low-stress” formula - healthy fats, protein and nutrient dense veggies.

 1 lb Organic grass-fed ground beef
 ½ Onion chopped
 3 Cloves garlic, chopped (don’t ever let someone tell you how much garlic to use. it’s instinct)
 1 Butternut squash, peeled, seeded and diced into 1/2” cubes
 6 cups (or more) organic greens (spinach, kale, chard, etc.)
 Salt, pepper and poultry seasoning (it’s not just for poultry!)

In a large pan or pot, saute the ground beef on medium-high heat until almost cooked.

Add onion, garlic and a dash of sea salt and pepper.

Cook for 5 minutes, stirring occasionally.

Add the butternut squash, sprinkle with poultry seasoning and a bit more salt (to taste).

Allow this to cook for 10-15 minutes, until squash is tender. You may need to add a lid to your pot to move this process along.

Add the greens, stir and cook until wilted.

Check your seasonings and enjoy!
