Winter Veggies with Chicken and Bacon

January's recipe is vibrant combination of greens, winter veggies and everyone's favorite - bacon. And chicken.

Recipe Ingredients:

  • 1/2 pound bacon, diced
  • 1 lb chicken thighs, bite sized cubes
  • 2 leeks, cleaned and sliced
  • 1/4 lb mushrooms, sliced
  • 2 sweet potatoes, peeled and cubed
  • 3 cloves garlic, chopped
  • 1 bunch rainbow chard, chopped
  • salt and pepper

Recipe Instructions:

In a large skillet, fry bacon on medium heat until crispy. Remove from pan with a slotted spoon, and place on paper towels.

Add chicken to skillet, lightly season with salt and pepper and cook through on medium-high heat. Remove from pan and set aside.

Add leeks and mushrooms to skillet (can add a smidge of olive oil if your pan is dry, or de-glaze pan with some white wine). Saute for 2 minutes. Add sweet potatoes. Season lightly with salt. Saute until sweet potatoes are tender. Add garlic and rainbow chard to skillet. Stir well and saute until chard wilts. Add chicken and bacon back to skillet. Stir to heat through. Adjust seasonings and enjoy!
